Whether your taste buds are growing bored with the kosher for Passover items (There’s only so much chocolate-covered matzo one can handle, eh?) or are looking for a delicious yet easy wheat free/gluten free treat, here’s a little something that will bring smiles to all the chocolate lovers in your life:
Fudgy Brownies:
INGREDIENTS:
- 1 cup semisweet chocolate chips, melted (Enjoy Life makes a great GF, DF, and SF alternative)
- ¼ cup unsweetened cocoa powder
- 1/3 cup vegetable oil
- 3 tablespoon water
- ½ cup sugar (or 1 cup if you want them truly decadent)
- 2 eggs (preferably at room temp.)
- ½ cup potato starch
- ¼ tsp. salt
DIRECTIONS:
- Preheat oven to 350 degrees. Grease an 8-inch square baking pan.
- In a medium bowl, whisk together melted chocolate chips, cocoa powder, oil and water until smooth.
- In a large bowl, whisk together sugar and eggs. Whisk in chocolate mixture. Fold in the flour and salt until just combined. Transfer batter into prepared baking pan.
- Bake 25-28 minutes.
